White Beans and Rice

and it’s Gluten Free!

Before we get started, I can’t stress to you enough how much I love my pots and pans. I actually have a whole post about them lol!

So a little back story but I promise it won’t be long… I love white beans and rice! Growing up this was a staple crop loved by all. Now I make it for my kids and they equally love it! It’s always nice to find things the whole family will love. It’s even better when it’s a comfort food from your childhood!

This recipe is so easy to make it almost feels like cheating! Did I mention it’s gluten free?

I don’t have exact measurement for the seasonings because honestly, no two people make it the same way. Sometimes you just have to season the food with your heart.

Alright, Enough chit chat let’s get to the food!

First things first.

We need to boil the beans for an hour or so. This is a super easy step. Just make sure you keep an eye on your water level! I do not use canned beans because I find that they do not get soft enough or break apart. I use Camellia Great Northerns

After about an hour you are going to add your salt, pepper, and garlic powder. Now it’s also time to sauté your onions and cut up your sausage. We like Eckrich natural casing sausage the best.

Once your onions are finished you’ll add them to the beans. Now it’s time to brown the sausage!

At this point your kitchen now smells amazing!

Once your sausage is full of flavor and just how you like it you’ll add it to the beans. Cook on medium low heat for another hour or so. Make sure you continue to watch your water level and stir from time to time. You don’t want it to burn!

It’s ok if it looks a little soupy right now. The beans aren’t finished doing their magic yet.

Once it’s all finished it should look like this. If it’s too thick just add a little more hot water and stir it up some more.

If it’s too soupy you just need to cook it down a little longer.

Serve over rice and you’re ready to eat!

It’s a super easy dinner and just makes you feel all kinds of worm and cozy on the inside.

Ingredients

  • Pot and water
  • 1 lb. Camellia Great Northerns
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)
  • 1 cup onions
  • 1 – 1.5lbs Smoked sausage (we like Eckrich natural casing)
  • White or brown rice (white tastes better but please do what’s best for your body)

Steps

Start by adding the beans in your pot and filling it with water. You will boil this for about an hour.

After an hour go ahead and sauté your onions and cut up your sausage.

Add salt, pepper, and garlic powder to your beans.

Once the onions are translucent you’ll add them to your beans and start browning your sausage in the same skillet.

Once the sausage is finished you’ll add it to the beans. Cook on medium to low heat for about an hour or so. Remember it should be boiling so the beans break up and don’t forget to watch your water! Serve over rice.
