Ok, I won’t bore you with a super long story about the meal because Lord knows I can’t stand those kind of blogs. I just wanted to share with you that I’ve been eating this meal for a large portion of my life and now make it for my family.

The original recipe doesn’t use ground meat so you always have that option to leave it out.

My husband doesn’t like meals that have zero meat in them, SO I started putting ground meat in my recipe and it really did amp up the flavor.

I said all of that so that you would know it can be a meat free meal as well.

LET’S GET TO IT!

This is our favorite brand of gluten free pasta! It tastes almost exactly like regular pasta.

It’s the only gluten free brand that the whole family likes and tastes almost exactly like the original. Once I found this one I was finally able to stop cooking two sets of food just to make everyone was happy.

*Start by cooking your pasta according to the box, cooking your frozen spinach and draining it, browning your meat (if using) and setting your oven to 375.

*Once everything is cooked you’ll mix it all up in a large bowl. I like to mix everything up and add the pasta last.

Now it’s time to spread it in a greased 9″x13″ baking dish. Sprinkle more parmesan cheese on the top and bake for 25 minutes.

Ingredients

  • 1.5 lbs ground meat (optional)
  • 16 oz. Barilla Gluten Free Rotini (1.5 boxes) https://amzn.to/47iv9Go
  • 16 oz. Sour Cream
  • 12 oz. frozen spinach
  • 1/2 cup grated parmesan cheese (plus more for the top)
  • salt, pepper, and garlic powder to taste (for the meat)

Steps

Cook the noodles and drain

Cook the spinach and drain

Brown the meat and season with salt, pepper, and garlic powder.

Mix all the ingredients together in a large bowl and spread in a 9×13 baking dish. Sprinking more parmesan over the top and bake for 25 minutes.
