These Gluten Free Dumplings Are A Perfect Way To Warm Your Soul This Winter

Here at Life with the Hortons we are always trying to find ways to help you navigate life without GLUTEN.
We have learned a few tricks here and there along the way and the learning never really stops. If I can get my whole family to eat gluten free meals, I’m confident you can too! It’s not always easy and if you are here you know that! With a little faith, hope, and effort, I have been capable of making our meals work. Not just for Payton, but for the whole family! It wasn’t easy early on. Payton would eat pretty much anything but the rest of the family were harder to get on board. Once I stopped “wallowing in self-pity” I started putting in the work and making things from scratch. We have learned that though there are some things that taste decent, home made is just better. I know for me, trying new things can be scary. What if it isn’t any good? The price of groceries is too high to take the chances on someone you don’t knows word. I GET IT! I grew up with mostly southern home cooked meals so I am kind of a food snob. I have been so lucky to have found ways to make the foods I love gluten free! It was a total relief. I started off cooking like normal and just keeping freezer meals for Payton to eat. But not only did that start getting expensive but I hated that it made her feel different from everyone else. Now, I’m sharing our meals with you. You can include the whole family in your meal plans and no one gets left behind!
LET GET STARTED!
My favorite flour for these dumplings is bob’s red mill 1 to 1 gluten free flour. We have tried a lot of flours and this one works best for our family. There isn’t a super gritty texture or a strong flour flavor.
You will also need 1 egg, 1 Cup of milk, and 1 tsp. salt.
- Beat the egg and milk until completely blended
- Add the salt and flour
- once the dough is stiff you’ll pull off a little at a time (it will be very sticky)
- On a lightly flours surface you will pat out your dough and then slice it into trips
- Place them on a floured place so they don’t stick
- You will do this until all the dough has been used
- MAKE SURE YOU SPRINKLE FLOUR BETWEEN LAYERS OF DUMPLINGS SO THEY DON’T STICK TOGETHER ON THE PLATE.
GLUTEN FREE CHICKEN AND DUMPLINGS
I like to use rotisserie chicken. You can also boil your own chicken. It just takes longer to cook it that way.
While I am making my dumplings, I boil chicken broth and water with salt, pepper, and garlic powder. (be careful with the salt if your broth has a lot of sodium.)
If you are boiling your own chicken, take it out and shred it once it cooked through. Chicken is considered cooked once the internal temp is about 165.
Once your liquid comes to a boil you will through your shredded chicken back in.
Bring it back to a boil and then you’re ready to through in the dumplings!
You will let this cook for at least 30 minutes or longer.
Keep an eye on it stirring frequent so it doesn’t burn on the bottom.
I like a lot of pepper in mine. If it doesn’t look like there will be enough I’ll add more while its cooking.
But that’s it! its super easy and its tasty!
Leftovers are great. The dumpling will absorb most of the liquid. You’ll have to add more water or broth depending on how strong you want it.
I doubled this and that’s why it looks like a ton of food. We ate on it for two days and I froze half of it for later. I have realized that with many meals, it’s cheaper to make a little more and freeze it. You will find that you only have to use a little more broth or stock.
Ingredients
- 8 cups chicken stock to broth
- 4 cups water
- Salt, pepper, and garlic powder to taste
- 2 cups gluten free flour (1tsp. salt)
- 1 cup milk
- 1 egg
- Rotisserie chicken
Steps

Boil broth, water, salt, pepper, and garlic powder while you make your dumplings.

Dumplings- beat egg, milk, salt, and flour until a firm dough forms.

Power your surface with flour and pat out a little dough at a time. Cut into strips and place on a dusted plate. Do this until dough is gone. DON’T forget to power each layer as you stack the sliced dough. you don’t want it to stick.

Once it has come to a boil add your shredded chicken and bring back to a boil.

Once it’s back to a good boil you can dump in your dumplings. Cook this for at least 30 minutes or more. Keep an eye on it and stir often so is doesn’t burn to the bottom.
