Let’s Talk Celiac.

Payton was diagnosed with celiac about 2 months after her type 1 diabetes diagnosis. Since type 1 is an autoimmune disease, the doctors run test to check you for all kinds of potential autoimmune disorders. Payton was “oh so lucky” to ping for celiac as well. Her levels were high indicating something wasn’t normal so we scheduled her appointment to get a scope and biopsy of her intestines. Though everything looked great the biopsy came back indicating it was celiac. She doesn’t have any symptoms or reactions to gluten which caused us to have her retested a few years later. The results were the same. Everything looked great but the biopsy came back indicating celiac. So once again Payton is on a gluten free diet which has given us the opportunity to learn some great recipes!

WHAT IS CELIAC DISEASE?

Celiac disease is an autoimmune disease that causes the body to attack itself when gluten is consumed which causes serious damage to the small intestine over time.

THE TREATMENT?

The ONLY treatment for Celiac Disease is a LIFE-LONG gluten-free diet.

RECOVERY TIME?

It can take anywhere from a few months to 2 years for your gut to fully recover after a celiac diagnosis.

Be PATIENT with your body. Healing takes time.

WHAT IS GLUTEN?

Gluten is a type of protein commonly found in wheat, rye, barley, and sometimes oats. Gluten gives these certain types of grains the elasticity/ability to hold together. Gluten/wheat is also an ingredient added to foods to extend their shelf life.

WHAT ARE SYMPTOMS OF CELIAC DISEASE?

Diagnoses may take several months, to years, until a proper diagnoses is found. Here are a few symptoms below.  Some people may have several symptoms, one symptom, or none at all.

Abdominal pain, bloating, gas, nausea, and vomiting, lactose intolerance, decreased/increased appetite, muscle cramps, joint pain, fatigue, canker sores, depression and/or anxiety, tinges in hands/feet, hair loss, unexplained short height.

WHAT IF CELIAC DISEASE GOES UNTREATED?

If Celiac goes untreated some conditions can occur further in life such as, diabetes, osteoporosis, other auto-immune disorders, and even some types of cancer.

IS THERE A CURE?

No, But staying on a gluten-free diet will stop symptoms, and further damage to the body. Also removing gluten from a celiac’s diet will allow the body’s intestines to recover over time!
