Easy Last Minute Dinner

I get it. Life gets crazy out of nowhere. Most of the time, it all happens right around dinner prep.

Up until recently, I was picking children up from school when I should have been prepping for dinner. What makes it even harder is knowing you’ll have to leave again for _________ practice.

There are all kinds of things that are going to cause stress and anxiety. Dinner does not have to be one of them.

Here is another one of my go to meals.

I LOVE chicken! It’s so easy. You can throw it on the grill, in a crackpot, on the stove, or in the oven. to top it all off pretty much everything goes with chicken so you have endless options for sides.

Today we are cooking frozen chicken tenders on the stove. We are accompanying it with a GF creamy Parmesan risotto and some steamed broccoli.

I will start with the Lundberg organic Creamy Parmesan Risotto. We just found this a few months ago and love it. I do order this from Amazon because I’ve never seen it in my stores.

Slap Ya Mama if one of our favorite seasonings. It had great flavor and is GF!

McCormick Grill Mates Roasted Garlic and Herb Seasoning is another favorite of mine and is also GF!

Argo Corn Starch is also labeled as Gluten Free!

Now that we have the main ingredients listed, and where to find them we can begin!

We will start by adding olive oil to a pan.

We will then add the frozen chicken tenders. I let mine cook on each side until they have turned white.

*While the chicken is cooking I start my Risotto. Just follow the instructions on the box.

Once they have thawed a good bit and turned white, I add all of my seasonings.

Your chicken is considered completely cooked once it reaches an internal temperature of about 160. I love this thermometer!

Now that your chicken is cooked, stack it up on the side. This will allow you to mix in a little cornstarch to thicken the seasoned water. I used about 2 teaspoons. This basically makes like a seasoned “gravy”.

Mix it all up and you’re good to go! its super easy and only takes about 30 minutes to make.

I like to toss my steamed broccoli with a little butter, salt, and pepper.

Put a little olive oil in a pan.

Add frozen Chicken and cook until white on both sides.

While chicken is cooking start your risotto.

Once chicken is white on both sides season well. I let it cook a few minutes face up. Then I flip it again to let the seasonings mix in with the water from the frozen chicken.

Once the chicken has reached an internal temperature of 160°, stack them up on the side. Add in about 2 teaspoons of corn starch. Mix it into a “gravy”.

Once it’s all mixed up, stir the chicken around and it’s all ready to serve!

I like to mix my steamed veggies in a little butter, salt, and pepper.
